Orange flavoured green farfalle with bacon | Abruzzo4foodies

I created this recipe some years ago to support cancer research fundraising campaign.

I love to prepare it in memory of family members and friends I lost due to cancer disease, it’s my personal way to honor their memory and keep talking to them as if we never parted.

Orange flavored green farfalle with bacon

Serves 4

  • 250 gr Farfalle De Cecco with spinach
  • 100 gr sweet bacon in cubes
  • 1 ripe red tomato (or 6-8 cherry tomatoes)
  • 10 spicy black olives
  • 1 ripe blonde orange
  • extra virgin olive oil
  • salt & pepper

10 minutes before you begin, prepare the orange zest with the aid of a grater, cut the tomatoes into cubes and place in a bowl with the orange juice you squeezed by hand a few minutes before, leaving aside a small amount. Let marinate for 10-15 minutes. In a medium size pan pour the oil and let it heat, put the diced bacon, spicy black olives, a small amount of orange zest, a pinch of salt and pepper as necessary, add chopped tomatoes and orange juice and let cook over medium low heat for about 10 minutes until the tomato has reached a bright orange color. Put a pot with salted water to boil, when it reaches boiling point add pasta and cook according to package instructions minus 1 minute. Drain and finish cooking in the pan adding the mixture of bacon, olives, tomatoes and oranges, tossing over medium heat for one minute. Turn off the heat, decorate with orange zest and serve hot.

Note: if you can’t find spicy black olives use normal ones, just add red hot peperoncino to enhance the meal if desired.
